
Material: Pork1tenderloin, stem lettuce (with root and leaves), Minced garlic, ginger, Spring onion.
Ingredients: Plant oil, Soy sauce, Corn starch with water, Chicken flavored powder, Salt, Chilli broad bean paste, Chopped chilli and Szechwan peppercorn(not powdered ), Chilli powder, Szechwan peppercorn powder.
1. Cut pork tenderloin in to thin slices. Marinate the slices with 1/2 teaspoon of salt, 2 teaspoons of water, 1 tablespoon of corn starch, 1/2 tablespoon of soy sauce for about 10 minutes.
2. Cut the stem lettuce leaves into 5 centimeters long and the root into slices2, then put in a big bowl. Turn on the fire, heat 1 wok spoon of oil, put stem lettuce root in, then the leaves in, put a little bit water in and stir-fry about 5 minutes till the lettuce is well done. put it back to the bowl for stand-by application.
3. Heat the wok till it is totally dried, then put 1and 1/2 wok spoons plant oil in. put 1 tablespoon of chilli broad bean paste, chopped chilli and Szechwan peppercorn then, minced garlic, ginger in and stir-fry 5 minutes and then put water in the wok2.
4. Put the pork slices in to the boiling chilli soup one by one quickly and add 4 tablespoons of corn starch-water mixture in, stir and mix them. Put the pork slices soup to the stem lettuce bowl.
5. Add 2 tablespoons of chilli powder, Szechwan peppercorn powder, 1 tablespoon of minced garlic and spring onion in the center of the bowl.
6. Clean the wok and dry it, put two wok spoon of oil in, heat the oil until here is some smog around the wok, and turn off the fire. Pour the oil in the center of the bowl and it is finished.
Tips:
1. You can also use beef instead of pork.
Marinate beef: Add 1 teaspoon salt, 0.5 tablespoon dark soy sauce, 1 tablespoon sweet potato starch, 1 egg white. Stir follow 1way. Keep throwing the beef to bawl till it is very sticky. Add 1 tablespoon oil in the end and mix up for smoother.
2. You can use cucumber instead of the stem lettuce root and you can use normal lettuce instead of of the stem lettuce leaves.
3. The water should be a little bit less than the bowl’s capacity.
