Stew fish with Pickles

酸菜鱼(Suan Cai Yu)

重量:鱼+鱼骨一共一斤. 将鱼骨鱼片分开 鱼骨切段 鱼片片薄片

500g of fish divid bones and meat, slices the meat into thin pices with skin, cut bones to smaller sections.

鱼片码味: 1勺盐 1勺淀粉 1勺料酒 半个蛋清-抓匀. 鱼骨码味: 1勺盐 1勺料酒-抓匀

Add 1 teaspoon salt, 1 tablespoon potato starch, 1 tablespoon cooking wine, 0.5 egg white in fish meat and mix. 1 teaspoon salt, 1 tablespoon cooking wine in bones and mix.

100克泡菜切到入口大小

Cut 100g Pickled mustard green leaves in to small size.

4个泡山椒 切碎. 泡嫩姜切四片, 泡红椒切5段

Minced 4 Pickled light green chilli. cut 4 pices of pickled young ginger, 5 section pickled red chilli.

两铲子油 酸菜泡姜 炒 1蒜末 0.5姜末 把酸菜炒香

Add 2 wokspoon oil to a dry wok, heat the oil up and add pickled young ginger and pickled red chilli, 1 tablespoon minced garlic, 0.5 tablespoon minced ginger in. Fry till semlls out.

加水量需要盖过鱼 然后下鱼骨头

Pouring water in that enough cover all the meat, add bones in.

煮到汤发白

Till the soup white.

尝下咸淡 不够再加1勺左右的盐

Add extra 1 teaspoon salt in if is not salty enough.

汤白之后加入鱼片(一片一片加 ). 好了之后倒进大碗里.

Then add fish pices in one by one then add minced light green chilli in, after 5 mins pouring everything to a big bowl.

加入1勺蒜末,1勺葱末 红泡椒, 最后浇上热油

Add 1 tablespoon minced garlic, 1 tablespoon minced shallots and red pickled chilli on top. Add 1 wokspoon hot oil on top.
