
Materials:Wet Noodles, Lean pork , Vegetable leaves.
Make Red Chilli Oil:Heat the wok till there is no any water in then put soybean oil/Canola Oil in; Add spices set(Ginger 2 slices, Spring onion2, Cinnamon bark 1,Bay leaves 2,Star anise2,Sandy Ginger 1, Smashed White cardamom3, Smashed Black cardamom 2, Fructus 2 .) in. Fry all the spices into black color then use strainer scoop those out. Pouring the oil to a clean dried bowl or jar and leave it 5-10 minutes aside for letting the temperature lower.
Pour the chilli flakes into the oil and stirring at the same time. 70% of flake and 30% of oil. You can add some Sichuan peppercorn powder or sesame in if you want to make it more flavorful.
Remake Soy Sauce:Heat the wok: Put 90% of soy sauce and 10% of dark soy sauce in, then add spices set(Ginger 2 slices, Spring onion2, Cinnamon bark 1,Bay leaves 2,Star anise2,Sandy Ginger 1, Smashed White cardamom3, Smashed Black cardamom 2, Fructus 2 .). Put brown sugar and rock candy in and Mix them till all the brown sugar and rock candy melt then turn off the fire and move those to a jar and set aside for a whole night, let the soy sauce absorb all the spices flavor totally.
Ingredients cutting:Mince the pork into the same size as rice.
Mince the spring onion.
mince 10g garlic.
Mince 10g ginger
Make crispy topping:
Heat the wok, use medium heat to make the oil to 60% hot(put your hand above the wok you can feel the heat)
Put minced pork in and fry a while. Add 4 drops of dark soy sauce, all the minced ginger in, 1 table spoons of cooking wine in, 1 full teaspoon chilli bean paste in, 1 teaspoon sugar, 1 teaspoon chicken powder, 1 teaspoon MSG in, fry the pork slowly till the color change to light coffee color.
Get the fried minced pork out with oil.
Make basic sauce:1 table spoon of minced garlic, 1 tea spoon of sesame paste, 2 tea spoon of vinegar, 0.5 tea spoon of peppercorn powder, 1 tea spoon of MSG, 0.5 tea spoon of salt, 1 tea spoon of sugar, 1 tea spoon of remade soy sauce. Put all the ingredients into a bowl first and then mix them, add 1/3 ladle of dry flake in chilli oil and 1 ladle of red oil on the top.
Cook noodles:Heat the water about 10-15 minutes to make it bubbling;
Drop a little bit oil in the water and put the vegetable leaves in(optional). After 1 minute, take the leaves out in to a bowel. Then put the the noodles into the boiling water. Depends on the noodles type you chose to boil 5-7mins, after noodles done then put the noodles in to the bowl with basic sauce in (tip: 1.you can try the noodles first to check if it’s ready by tasting a little bit.If no raw wheat flour flavor, it is ready. 2. pour 3 times cold water in after the the water boiling with noodles to make sure the noodles been cooked). Put vegetable leaves on the top and scatter crispy meat and minced spring oinion, then done. Mix the noodles and sauce as quickly as you can to make sure it doesn’t stick together.
Tips:
Noodles: Should be the thicker one cause it’s easier to cook.
Vegetable leaves: Make sure you can still taste the fresh flavor after strong flavor.

Remade soy sauce:Make it more flavorful
Soy sauce:You’d better use the brand named 大王(Da wang ;Literally, means the big king), because it is thick enough or you can use dark plus light soy sauce mixed sauce .
Rock candy: Make the color and light of remade soy sauce more brighter.
Boil pork with cold water: It is for letting the blood out of the meat and get rid of the fishy flavor.
Put a drop of oil before put vegetable leaves in: Make the color of vegetable leaves looks more greener and the texture of noodles smoother.
You can add extra nuts you like in.
